ArtiHeart and Potato Salad


Serves 6 as a Side Salad


12 Baby Yellow Potatoes (or any very small potato)
1 (6 oz) pkg Monterey Farms Natural ArtiHearts
1 Small Red Onion, thinly sliced
8 oz. Feta Cheese
1/3 cup Sherry Vinegar
1/2 cup Extra Virgin Olive Oil
1 Lemon, juice only
2 sprigs fresh Tarragon
Salt and Pepper to taste

Wash and cook potatoes in salted water until tender. Cool and cut into small quarters. In a large bowl combine Artihearts, potatoes, sliced red onions and crumbled feta cheese. In a separate bowl combine vinegar, olive oil, lemon juice, chopped tarragon, salt and pepper and whisk well. When you are ready to serve, toss the oil and vinegar mixture with the potatoes and ArtiHearts. Place on a platter and serve.

Notes: This is a twist on potato salad, no heavy mayonnaise found in this one though.The Natural ArtiHearts add a new dimension to this classic salad and the feta brings a nice salty hint. Try this salad at your next BBQ, it’s sure to be a winner.
