HERBAL ARTIHEARTS™ AND HEIRLOOM TOMATO COMPOTE
Serves 6 as an entree
1 6 oz. pkg. Herbal ArtiHearts™
2 Heirloom Tomatoes, diced, (about 2 cups)
1 Red Onion, diced (about 1 cup)
2 cloves Garlic, peeled and minced
4 Tbs.Extra Virgin Olive Oil
¾ cup Dry White Wine
Remove the Herbal ArtiHearts from the pouch and chop them roughly. Heat the olive oil in a sauté pan. Add the onion and garlic and sauté over medium heat until translucent, about 5 minutes. Add the white wine and reduce by half over high heat. Add the tomatoes and the chopped Herbal ArtiHearts, swirl in the pan and spoon over the grilled swordfish steaks.
This recipe would be great with any grilled fish, swordfish, salmon or rock cod for example or with grilled chicken.
